Start at the end and work backwards.
What data do you want? What sensor do you need to get that data? Can the sensor be hooked up to a Pico? Rinse and repeat, and build your own rats nest.
You might just have to read every snippet of information on every blog or forum to get an overall picture, then buy some stuff and make it work. One piece at a time, but keep your end goal in mind.
