Yes you can render the two camera images side-by-side.
There are a couple of restrictions with regard exactly how you can achieve that, largely that rpicam-vid using DRM preview will only allow one instance. Using Picamera2 should allow you to configure both, but may need a little fiddling, or it should work when in a window manager (eg Wayfire).
It does partly depend on how the VR headset presents itself to the system - one display which it splits to the 2 eyes, or 2 displays?
Autofocus may count against you unless you set both cameras at a fixed focus position - having one eye suddenly refocus is going to be a little off-putting.
